Warm and Spicy: Jerk-Style Tempeh Stew

The darkness that comes with the end of daylight savings time always makes me crave warm, comforting foods like casseroles and hearty soups. For some, it's the cooler weather, for me it's the darkness that truly marks the change of seasons. Unfortunately, the cravings for comfort food can also mark the progress of the season on the notches of my belt if I don't make the effort to cook healthy meals and instead resort to cheese and carbs.

Making the endeavor to find rich, flavorful recipes full of healthy ingredients ensures that I fulfill my cravings without inflating my waistline. Fortunately, the Co-op features a variety of recipes online that make sure my want for comfort is complete and my palate is satisfied.

This week, I tried out this Jerk-Style Tempeh Stew recipe. Not only was the stew warm, thick, rich, and spicy, it was also low in fat, high in fiber, and quite filling. I paired the stew with a tangy cilantro, lime, and ginger jasmine rice which balanced the heat of the stew nicely. The recipe is easy to follow and once everything is chopped up, the dish comes together quickly. If you're looking for a hearty, meatless dish, this stew fits the bill.

So the next time you find yourself struggling to locate a delicious, healthy meal, peruse the recipe selection from the Co-op. You will find recipes to satisfy your cravings without compromising your health.
